Adium (http://www.adiumx.com)
- combined IM, speak to people on Yahoo, MSN, etc (better than iChat IMO)

NeoOffice (http://www.neooffice.org/)
- a free MS Office substitute - open, edit and save .doc, .xls etc files.

Depending on what you get (or rather, how you get it ;) ), you might find this one's essential...
Little Snitch (http://www.obdev.at/products/littlesnitch/index.html)

Loads of things I can't remember at the moment (recently lost my bookmarks  ) but check out what's posted here...

Will try and post more as and when I remember.

Transmission is great for Torrents. Adium is the best chat client. Cyberduck is free for FTP.

google "Best Free Mac Apps" and use a link from lifehacker, tuaw.com, engadget or other similar tech site.

VLC is very handy for movies

iphoto is quite nice, if you are super keen though then there is aperture for organization and photoshop for editing...

yeah, you'll also need to download Perian, it's the Swiss Army Knife of video codecs for mac. probably Flip4Mac too, but Perian may handle it all.

Quicksilver

zen mac-ified.

although rumors persist of it's demise - it's a sweet little launcher - and has so much extension power built in.

Growl - is dead handy - system-wide and nifty.

seconded VLC - although with Perian and Flip4Mac - most content plays in QT. Get QT Pro-d.

get more RAM - 2GB if you can. that'll make everything better.

If you feel like mucking around - VMWare's Fusion is super. I've got Ubuntu and Windows XP virtual sessions that I fire up every now and again. Although Ubuntu is so GUI - it doesn't feel very hackish at all.

I like TextWrangler for text editing.

I use Firefox 3 on my personal iMac - but on my school supplied Macbook - FF3 eats itself - so trial your browsers.

Fluid - is neat. Helps you make stand-alone web apps. Try it out.

Appcleaner is good for tidying up your files/apps - and deleting associated crud.

I should have done links with all of those - but just do a google for them.

Google Earth and

QUICKSILVER

Quicksilver is the navigation-interaction all-in-wonder that works like Spotlight should!

Yojimbo - from Barebones Software.

Great app for organising and tidying up all that digital crud you have hanging around your life.

I would say use VMWare Fusion (http://www.vmware.com/products/fusion/) over parallels. Runs a lot smoother in my experience.

Obviously if you want full hardware access for XP - then you'll have to run Boot Camp - but if you're wanting to run OS X apps side by side with XP - Fusion is brilliant.

Dragging and dropping a file from the OS X finder into the XP desktop - and then using said file is very cool.
